Peppermint Meltaways




Candy canes and Christmas are synonymous.  There is something magical about the crisp scent of peppermint wafting through the air whether from cookies baking, candles burning, or your kids eating what should have been decorating the tree branches.

When I discovered the recipe for Peppermint Meltaways I knew I had a “make every year” treat.  These buttery nuggets literally melt in your mouth and are sure to disappear from your dessert buffet quickly.  As is a requirement for my cookie baking, they freeze beautifully.  In the past I have put the glaze topping on them and THEN froze them.  However, Land o’Lakes recommends freezing most cookies without the topping so that is what I am trying this year.  We’ll see if there is any difference in the final product.

Just a couple of notes about this recipe.  First, the glaze recipe makes far too much for the delicate drizzle shown in the photo.  I cut the ingredient amount in half and still have some left over.  If you make a double batch of the cookies though, you’ll be in good shape!  Also, in addition to the peppermint extract, I also like to add about 2 drops of peppermint oil for added zing.
