For the next twelve days, I am featuring a cookie recipe from my personal Christmas collection.  These cookies showcase the best of holiday flavors.  Additionally they are recipes that freeze/thaw well, which certainly helps reduce last-minute stress.

 

Grab some cocoa, coffee, or tea and enjoy!

 

Here’s another “technically not a cookie” recipe for you to try:  Eggnog Muffins.  While not necessarily appropriate for your cookie tray, they would make a welcome addition to a Christmas brunch.  Believe it or not, these little darlings freeze beautifully as well.  Since a dozen muffins go stale before we eat them in our family, I keep half out at a time.  And while they are fabulous in the morning, they do double duty in the evening as a great bedtime snack.  Participating in a Christmas bake sale?  These muffins would be a perfect alternative to the run-of-the-mill offerings.

 

One note:  I don’t keep rum extract on hand at home.  You can easily use “real” rum in the same amount as the alcohol content is, believe it or not, about the same.  It’s entirely up to you.
